Here are a couple of hints if you'd like to skin your catch yourself:
When field dressing or skinning, be sure NOT to cut through the tendon on the back legs. This allows you (and your butcher) to hang the animal to skin it.
Be sure your skinning knife is sharp. Pull the hide away from the carcass, and cut in between as you are pulling. Deer hides are relatively easy to skin, with the exception of a few areas you have to be careful on. Wild hogs, on the other hand, are not easy at all to skin.
Keep the carcass clean! Do not place the skinned animal on the ground, as it will get dirt, grass and twigs all over it, making it very difficult to clean for processing. In fact, you may even lose some meat. Also, do not place the skinned animal on the hide, as the hair will come off and get all over the animal, again making it very difficult to clean for processing.
